Chicken and Pepper Kabobs

Ingredients

4

boneless skinless chicken breasts, cut into 3/4 inch cubes

garlic cloves, peeled and chopped

1/4

cup fresh lemon juice

1

teaspoon ground cumin

1

teaspoon thyme


Salt and freshly ground black pepper to taste

1

green or red pepper, seeds removed and cut into cubes

8

shallots, peeled and quartered



Instructions

1.

Place chicken in a shallow dish and toss with the garlic, lemon juice, cumin, thyme, salt and pepper to taste.

2.

Cover and refrigerate overnight.

3.

After marinating, preheat the oven to broil or grill to high.

4.

Thread the kebabs by alternating the pieces of chicken, pepper and shallot.

5.

Brush the kebabs with the marinade and cook on the barbecue or under the broiler, 5 minutes on each side.

6.

Note: You will need kebab sticks, If you are using wooden skewers, soak them in water for at least 30 minutes so they won’t burn.
