Ingredients

4-5 Sweet Potatoes/yams

1 large yellow onion

1 red pepper

1 to 2 Jalapenos

Olive oil

Salt and pepper

Breakfast sausage

Shredded cheese


Instructions

1. Cube Veggies and put in glass pan

2. Drizzle with olive oil

3. Salt and pepper to taste

4. Cook at 400 for 45+ minutes (until sweet potatoes are soft)

5. Brown sausage and add to cooked veggie pan and sprinkle shredded cheese. Cook until cheese melts (maybe another 5-10 minutes)
